Mashed Cousins Company Story
This is the story of the Mahrousa family, pioneers of the tahini, halva and sesame oil industry in Aleppo governorate. “The story began in the Syrian province of Aleppo in the Aqaba neighborhood in 1918, and then moved to Latakia province , where there were more than one factory and branch between the two provinces, which helped the development of their work and the market for their products faster.”
Each type of tahini-based dessert has a specific method:
“Halva is made of sugar, tahini, and halva. It is made by boiling “sugar with water” and then putting it in a whisk. In the meantime, we’ve heated up the sesame-based tahini to mix with sugar and halva. It is not cultivated, but grows in wild lands in areas of Aleppo and grows every five years, not annually.”
and how tahini is made and produced:
The production of tahini starts from the stage of putting sesame seeds in a specialized mill to peel them. It is then placed in a large basin of water to separate the chaff from the white sesame. The sesame is then transferred to another basin to be washed again. before being transferred to special machines to prepare it for the final stages of production. It is then taken out to be cooled and sifted. It is then transferred to the final stage, during which it is placed inside the grinding stone to squeeze it and extract it in the form of pure, usable flour.
As for sesame oil serge:
“We roast sesame to a reddish color and extract sesame oil from it. Sesame also produces a “red tahini” from which “Kasiba” is made, which is sold only during Ramadan.
on the benefits of sesame oil:
“‘Sesame oil’ has many health benefits including relieving anxiety, calming nerves, and relieving stress. It is good for the mouth, gum disease and teeth. Sesame oil does not cause any side effects or digestive disorders. On the contrary, it helps alleviate chest pain by wiping it over the chest area and then placing a cloth napkin slightly heated on the fire to withdraw the pain, God willing.
